Hyderabadi Gosht ki Tahari...

Ingredients:
1 kg lamb ( bone/boneless)
3 cups Basmati Rice
2 onions
3 tomatoes
Small Potatoes
1 cup oil
1 tbsp Red chilli powder
1 tsp turmeric
2 tbsp ginger and garlic paste
1 tbsp garam masala
½ cup yogurt (Optional)
Salt to taste
½ tbsp Black Pepper corn
1-2 Cinnamon Stick
3-4 Cloves
2-3 cardamom
Seasoning & Garnish
coriander leaves n mint leaves( finely
chopped )
¼ tbsp Roasted Almonds and Cashew nuts
(optional)
Procedure:
Clean and wash the mutton pieces & drain
thoroughly.
In a large non-stick saucepan/Khadhai
add oil at medium heat, add onions & fry
till they change colour.
Add ginger & garlic pastes, fry for 1
minute.
Add cinnamon stick, cardamom,black
peppercorns Cloves and Let it splutter and
fry.
Add red chilli powder, turmeric
powder,salt,garam masala powder and
mix well.
Then add chopped Tomatoes and yoghurt
(optional) gets smooth and mushy.
Add the Small potatoes,let cook till the
its smooth and soft and remove from the
saucepan keep aside.
Now pressure cook the mutton for 3/4
whistles without adding too much of
water, until the meat is tender.
Meanwhile,
Wash the rice and soak it in surplus water
for about 1/2 hour.
After the mutton is tender, Add lemon
juice,salt, coriander leaves and Mint
Leaves and a cups of water(as per the
requirement)
Then add the drain rice,allow to cook at a
medium heat,for 10 minutes then add
potatoes (Note: You can add the potato
later too)and stir it slowly cook it at a
low heat,until the liquid is absorbed.
Do not cook on a high heat,simmer heat
and cover the pan leave till done.
Remove pan from heat.
serve with Raita
