Fuchkawala special aloor dom

Fuchkawala special Aloor dom...

Small baby potatoes 500 gram
Onion small 1 pst
Tomato small 1 pst
Black pepper 1/4 tsp
Ginger garlic pst 1 tsp
Green chili 3-4 pst
Bhaja Moshla ( dry roast 3-4 dry red chili+ 1 tsp cumin + 1tsp saunf )
Coriander and cumin coarsely pwd 1tsp
Tomato ketchup 1/2tsp
Tamarind pulp 2 tbsp
Coriander leaves chopped 1-2 tbsp
Turmeric pwd 1tsp
Rock salt 1 tsp
Kashmiri red chili pwd 2 tsp
Freshly squeezed Lemon  juice 1/4 tsp
Sugar
salt
Mustard oil


Procedure:

Boil the potatoes with little salt  and peel the skins.
Heat oil and fry potatoes with little salt, turmeric pwd
And Kashmiri red chili pwd till they are golden in color.
Take out of the pan and keep aside.

In the same pan add coriander and cumin coarsely pwd to
remaining oil and fry for 30 seconds.

Now add ginger garlic pst and fry for another 2 minutes .
Add onion , tomato, green chili pst , turmeric pwd red chili
Pwd rock salt black pepper. Keep the flame on medium
Till the oil starts separating .

Add fried potatoes , tamarind pst bhaja moshla , tomato
ketchup ,Lemon juice .

Now add sugar  and cook for 3-4 minutes.

Turn off the heat and serve with chopped coriander leaves
And bhaja moshla .

Mutton Kosha

Mutton Kosha...

Ingredients :

Mutton 1 kg
Onion 3-4 sliced
Ginger pst 2 tsp
Garlic 1 tsp
Potato 2
Turmeric 1 tsp
Red chili pwd 2tsp
Cumin pwd 1 tsp
Yogurt 1/4 cup
Garam Masala pwd 1 tsp
Clove 3-4
Cardamom 4-5
Cinnamon 1
Bay leaf 2
Whole dry Red Chili 2
Peppercorn whole 7-8
Mustard Oil
Sugar
Salt


Procedure :

Marinate the mutton with 1 sliced onion   yogurt ginger garlic pst
Red chili pwd and 1 tbsp mustard oil. Cover and allow the mutton
to marinate  in the fridge at least 6-7 hr.

Peel the potatoes cut into halves ,Smear little salt and turmeric pwd
and fry them and keep aside.

Heat a pan and add mustard oil . Now add bay leaf, whole red chili
Clove, cinnamon, pepper corn , cardamom. Let it sizzle for few minutes.

Add the onions and fry them until they are light brown .

Now add marinated mutton . Add cumin pwd and salt.
Mix everything and keep frying.


Now cover the pan and keep the flame on medium .
Stir in between to prevent from burning .

Now add potatoes and 1 cup hot water . Mix thoroughly.

Cover and cook until the mutton is tender.

When the mutton is thoroughly cooked add garam masala pwd
Mix and remove from heat.

Serve hot with steamed rice or Luchi .

Ilish Beguner Tel Jhol

Ilish Beguner Tel Jhal

Ingredients :

Hilsa Fish / Ilish 6 pieces
Eggplant/ Begun 2 cut into lengthwise pieces
Turmeric Pwd 1 tsp
Red chili Pwd 1/2 tsp
Nigella seed / Kalojeera 1/2 tsp
Green Chili 3-4
Hot water 1 cup
Salt
Mustard oil

Procedure :

Marinate the fish with little turmeric pwd and salt.

Marinate eggplant with little salt .

Heat oil in a pan and fry fish pieces each side for
1 minute.Keep them aside .

Now fry the eggplant till they are golden. Drain from the oil
set aside.

Temper the same oil with nigella seed and green chilies.

Make a paste  of salt ,turmeric pwd ,red chili pwd and water .
Now add this mixture . Cook for 5 minutes on low flame .

Now add hot water . Bring it to boil.

Add the fried eggplants and cook for 3-4 minutes.

Add fish pieces and salt. Shimmer for 5 minutes.

Turn off the gas and serve hot with plain rice .

Arvi Chicken

Arvi Chicken...

Ingredients:

Chicken 500 gram
Taro root arvi 200 gram
Potato 1
Yogurt 1 tbsp
Ginger garlic pst 2 tsp
Turmeric pwd 1 tsp
Red chili pwd 1 tsp
Onion 2 sliced
Tomato chopped 1
Jalapeño 1 Chopped
Cumin seed 1 tsp
Pav bhaji masala 2 tsp
Oil
Salt

Procedure :

Marinate the chicken with yogurt ,turmeric pwd ,
Red chili pwd , ginger garlic pst ,little oil
Salt

In a pan add arvi and potatoes  with turmeric pwd and salt.
Fry it and take it out .

Now heat oil in a nonstick pan add cumin seeds and sauté for a
minute.

Add onion and sauté till golden brown.

Then add chopped tomatoes and jalapeños and cook for 5-6 minutes.

Add Pav bhaji masala and mix well.

Now add chicken , salt and mix well . Cover and cook for 10 minutes
On low heat .

Add arvi and cover and cook till chicken  and arvi is tender.

Serve hot with rice

Murg Enchor Korma

Murg Enchor Korma...

Ingredients 

Enchor 500 gram
Boneless chicken 200 gram
Beresta pst 2 tablespoons 
Cashew  pst 1 tablespoon 
Tomato 1 purée
Yogurt 1 tablespoon 
Ginger Garlic pst 2 tsp
Turmeric pwd 1/2 tsp
Red chili pwd 1 tsp
Salt
Cumin 1 tsp
Garam Masala 1/2 tsp
Ghee 1 tsp
Beresta for garnish 

Procedure :

Heat oil in a nonstick pan add cumin and sauté for a minute.

Add Beresta pst ginger garlic pst red chili , turmeric pwd and mix well.

Add tomato purée and yogurt , cashew pst  and cook for 5-6 minutes.

Now add chicken and boiled jackfruit and salt  . Cover and cook for 10 to 15 minutes
on low heat.

Add garam masala ,ghee and mix well ,

Serve  hot garnished with Beresta.

Bhuna Gosht

Bhuna Gosht...

Ingredients :

Mutton 500 gram
Onion 3-4 finely chopped
Ginger garlic pst 1 tbsp
Red chili pwd    2 tsp
Turmeric pwd 1 tsp
Coriander pwd 1/2 tbsp
Yogurt 2 tbsp
Tomato 2 chopped
Green cardamom 3
Peppercorns 6
Dried red chili 2
Clove 2-3
Bay leaf 1
Garam masala pwd 1/2 tsp
Beresta for garnish
Oil

Procedure :

Heat oil in a nonstick pan add dried red chili. , peppercorns
Clove, cardamom . Sauté for a minute.

Add onions  and sauté till brown.

Add mutton pieces and ginger garlic pst and sauté for a minute.

Add red chili turmeric and coriander pwd . Mix well .

Add chopped tomatoes and mix well  . Cover and cook for 30 to 40
minutes on low heat.

Add yogurt and cover and cook till mutton is tender .

Add Garam masala and mix well.

Serve hot garnished with beresta .

Bhindi Sorse Posto

Bhindi Sorse Posto....

Ingredients:

Bhindi 500 gram
Potato 1-2
Mustard pst 1  1/2 tbsp
Posto pst 2 tbsp
Kalongi 1/2 tsp
Green chili 2-3
Tomato 1 chopped 
Turmeric pwd1 tsp
Salt
Mustard oil


Procedure :

Heat mustard oil in a pan . Add Bhindi and fry them . 
Remove from the oil and set aside.

Then add Kalonji and green chili sauté for 1 minute .

Add chopped tomato and fry for another 1-2 minutes.

Now add potatoes and turmeric pwd and fry on low flame .

Now add the mustard and Posto pst and mix nicely .

Add Bhindi and cover it and cook on low flame till the bhindi and 
potatoes become soft.

Serve hot with rice.
