Eid- ul-Adha special Mutton Durbari...
Ingredients:
Mutton meat 1 kg
Onion 2 large
Ginger & garlic paste 2 tbsp
Vinegar 1 tbsp
Warm water ½ cup
Tomato paste 2 tbsp
Sesame seeds 1 tbsp
Mustard seeds 1 tbsp
Bay leaves 1
Poppy seeds 2 tbsp
Cinnamon stick 2
Clove 4
Whole black pepper 10
Big brown cardamom 2
Green coriander leaves 2 tbsp
Green chili 2 split
Kashmiri Red chili pwd 1tsp
Cooking oil 1 cup
Dried red chili 4
Procedure:
1. Cut Mutton meat 1 inch cube size.
2. Make masala powder from sesame seed,
mustard seeds, bay leaves, poppy seeds,
cinnamon sticks, whole black pepper, cloves,
big brown cardamoms, dried red chilies.
3. Put them in a dry mill & grind to fine powder.
4. Now rub the masala powder to the meat,
adding ginger & garlic paste, vinegar & salt, kashmiri red chili pwd
leave it for marinating for 8 hours.
5. Take a medium size cooking pot, heat oil,
add onion slices, fry it till it get brown.
6. Add the marinated mutton meat fry it till the
meat is brown.
7. Now add the water, leave it to cook till the
meat is tender.
8. Add the tomato paste, green chilies & green
coriander leaves.
9. Keep stirring the meat, cook further for 3
minutes.
10. Serve hot with hot Nan or Paratha...
