Doi Begun

Doi Begun (Eggplant Yogurt curry)


This is a delicious,easy recipe which takes very little time to prepare.It has a mouth-watering,tangy taste.

Ingredients:


Eggplant- diced into around 30 small cubes

Yogurt- 100gms beaten

1tbsp mustard seeds

1tbsp red chilli powder

2tbsps coriander powder

11/2 tbsps garam masala powder

11/2tbsps+1tbsp turmeric powder

3 green chillies

4tbsps oil

salt to taste

11/2tbsps sugar

Water


Procedure:


First marinate the diced eggplant pieces with 1tbsp turmeric powder & salt for 5mins.


Next,add the red chilli powder,11/2tbsps turmeric powder,coriander powder,salt & sugar to the yogurt.Stir it thoroughly to make a smooth paste.


Meanwhile heat 2tbsps oil in a frying pan & fry the marinated eggplant pieces on low flame until golden brown.Thereafter remove them.


Heat 2tbsps oil & add mustard seeds. When they splutter,add the yogurt directly & bring it to boiling point.


Add some water to make the gravy & also add the fried eggplant pieces.Add green chillies & cover the pan for 3mins.


Remove the lid.Gently stir until it forms a thick,rich gravy & the oil separates.Remove from flame.


Add the garam masala powder & cover it for another 2mins.

Yummy doi begun is ready!!!
